I've been in hiding......building new smokers! hoping to have 2 drums on the go (definately got one built), as well as the ProQ. Been testing new rubs, but feel a bit out of touch!!!

Just wanted to add our thanks to Toby and Kate, and everyone else who helped organise the weekend. It really was as enjoyable as everyone promised, and a pleaseure to meet such a welcoming and friendly bunch. A lot of good advice was received, if only I could remeber it!!

To be honest I haven't really used it yet, all i have done is boil some water and season a wok. I am bringing it next week, so you can have a play!
First impressions were a little dissapointing, didn't think it was as powerfull as I expected, but it certainly gets pans hot, I easily seasoned a wok ...

I agree resting meat is needed and improvers the flavour. I foiled my pork last week at about 1am (decided I would start cooking late in the day!) and wrapped it in a couple of tea towels. It was still warm at 7am, and i had bbq pork sandwich for breakfast! Starting early tomorrow, as I want to eat ...
