Dumb question (possibly!)
I'm not involved in the cook but want to come down with some friends and check out the food and hopefully get to taste some. Is this the sort of thing where the public can turn up, soak up the atmosphere and get something good to eat ? If so what time is best?

I've stumbled across it before and it's excellent. I'm heading out again this year to enjoy some of the fine chow, it's more of a festival than a competition but you get a good idea of what excellent BBQ can taste like as people drive their rigs in from all over the USA.

I brined the chickens in halfs inside ziplock bags (from costco). I also found the tv shows up on nzbmatrix.com, haven't watched them all yet but am working though them.

Photo attached which hopefully uploads. Not the best shot but has both sets of Beef Ribs and a few chicken halfs.. The beef turned out well after 7 hours but probably could have done with 8. The chicken was perfect, brining it really helps.

Afternoon all,
Just joined the forum, based in South London. Slightly obsessive about smoking and saw bbbqs.com on the Pitmasters TV show, had to join the forum!
Owned a WSM for about a year, got 2 racks of Beef ribs and 2 chickens on the smoke now, love those winter BBQ's.
