Hello. I'm over in Letchworth. Have you got yourself a dedicated smoker? Haven't tried the butcher there (normally I go to Baldock). Would be interested to learn about the quality of the shoulders and rib racks you source though.

Just aheads up...

I went food shopping today at Sainsbury's and noticed they had semi decent joints of vac-packed British boneless pork shoulders.
Half-price at £3 per kilo so I picked one up (was 2kg).
It looks to (and should) be good enough for general backyard BBQ.

Not impressed with the one I did when compared to my local butcher joints. It will do me for 'filler' rolls but I'll probably not bother getting it again.

I only ran a practice run on the burgers a week before and didn't expect such an amazing result for the team. Being able to watch the judging was a really useful experience and seeing Dr Sweetsmoke again was a pleasure.
