I am not part of any team and have next to no experience with low and slow cooking apart from 1 pork belly, but I am wanting to learn.

To Blanche or not to blanche - I did and it tasted great, thankfully it was not a large piece of meat or I would have had to leave it on there until 2200.
Some garlic rice and Spring cabbage on the side and I had a great dinner..

Due to time, I just did it.
Its been in the Weber now for about 1hr and it is looking ok and smelling better.
Had some troubles with the coals going out on one side, but I topped them up from the chimney a little while ago.
Handy hint - Wear more than just socks when using a chimney a coals do get ...

Why Styrofoam???
Sorry for the annoying question, but seeing as Styrofoam is so environmentally unfriendly, why is it used in BBQ comps in America and I presume here also?
