Hi,
Never really got to grips with this cooker and frankly I am not going to need the extra capacity over my Brinkmann Gourmet smoker. Only used 4 times in total, in very good condition. All stackers/racks etc. as new.
Also have a maverick wireless thermometer which I am considering selling, again ...

I find the clay saucer method amazing, makes my vents almost digital they're so accurate. I can also get higher temps using clay. However I can hit 260 with water no problem.

Thanks guys for all the replies. I do keep all the vents open and have used it in different places in the garden so I don't think air flow is an issue. I believe the temp gauge is near accurate(though not tested) because of the results ie. meat being cooked at too low a temperature. I do take meat ...

Thermometer seems like a good buy then...Excel turned up today!! Good timing bought a pack of ribs from costco yesterday..I cannot remember whether I had to do a dry run in the brinkmann smoker to burn off residue..is this necessary with the excel? Just going to go with charcoal for now ...

Noticed the ribs last time I was in costco as well. They do sell the racks in Tesco as well for about three pounds. Cheapest place I found them was frozen at my local Chinese supermarket. Ginger Pig in Borough market do sell really nice ribs but are pricey. Did once buy beef ribs from them as well ...
