well, can fit 3 beef rib racks on the 57 and 2 on the 47, so I only have 5. I perhaps need to chop them in half so they go a bit further......

Also, not done beef ribs on Bbq before so a bit worried that they may not turn out that good, I'e too chewy?
Any tips to avoid this, beyond temp control would be very useful.
Also. If I pile a set of briquettes to one side of the kettles, how do I prevent the ribs nearest from burning / drying out ...

Thanks for that, I'll have a look at trying to arrange as many beef ribs on both kettles later and see if I can perhaps cook later tomorrow and then reheat on Satuday with the sauce.
Not sure if the ribs will dry out or become tough if reheated?

Right, popped down to Smithfields market yesterday and picked up all the meat. I had a brief panic attack when I realised just how much i have got to cook, but my blood pressure has returned to normal now, for now!

sorry for the late reply, not been on here recently.
i cut some wooden blocks and screwed them into the cut out, so the outside of the kettles rest on this surface and this leaves a gap all the way round.

well, a good few years later and it's still going strong. I cover the whole top with really thick alu foil from costco, which means a new surface every time I cook. The vinyl is looking a bit tatty now, but the board has not warped yet.

thanks guys, here's hoping for some good ol sunshine so i can make good use of it.
As much as i luv cooking on it, the one thing I absolutely hate is......... smelling like i've had a good smoking afterwards!!

Finally done it in the end using as couple of sheets of outdoor ply and wrapped in vinyl. has held up well with no melting or burns for 3 large cooking stints with all 3 bbqs on the go. A 57 and 47cm weber plus a kingsford grill around 8yrs old now bought from good old costco!
