Custom Build - To frame or not to frame?

Hi everybody

I'm currently just putting plans together for an insulated smoker, similar to a pitmaker vault.

Whilst chatting with the guy who's going to make it for me, he suggested building a frameless cabinet.

There are obvious weight benefits, but I was wondering about rigidity. Has anybody ...

Smoking in foil trays

Hi

I've seen a number of people smoke in trays rather than on the racks themselves. Seems an easier way to keep things clean.

Logic would say to me that the smoke wouldn't permeate quite as well. Is this correct? Is it noticeable?

Does it matter by meat? IE brisket and pork are possible ...

JS - Why wouldn't they be great for some smokers?

Unless, obviously, they use something other than logs (don't know much about superiors) ?
