Interesting, my sous vide is an all in one bit of kit, so can't use it like you suggest, but cannot see it causing any issues or degradation at that temperature. I hold my pork for hours in the oven warmer than that without issue, in fact despite the bark softening, I think more of the fatty ...

Think I'd go with Braai. Ribs are a good start and loins are really easy.

Other than that pulled pork from a pork shoulder.

Pork shoulder is very forgiving, but ribs give you many opportunities to test out when they are ready if you do a few slightly differently

I imagine without decent boxes a courier will just destroy it.

I did my first cooks simply using one of the charcoal dividers, wrapped in foil.

Then came smokenator, much easier but think there are now better.

Then came the WSM

Now looking at a BGE

All in a few years.....run away now!!

Joking aside, I've been great with all briquettes apart from the BigK ...

Do the ceramics not get black & gungy like the WSM, seems weird to me that the pristine ceramics would get coated with smoker 'gunk'?
