Just as an update, these were the wrong size. the hole in the centre is 5/16" rather than the panel hole being 5/16". My mistake, i misread the details.

Cool. I was worried that a suagr filled rub would burn when crisping too so was thinking of leaving the suagr out, and just going spicy. Does your dry rub have sugar in?
Also how long do you normally give them at 250? Will use a thermometer, but have to open to use it so try and minimise how many ...

Has anyone tried crisping the skin of chicken thighs up post-smoking?
I'm thinking x-amount in the ProQ Frontier low and slow, then dropping the grill down onto the coals and finishing the skin off. Not sure if it's too late once they've had a good while smoking though, like does the going rubbery ...

Never mind, just found some on etsy that have the same 5/16" hole that the official maverick ones have. Not a use that I would have thought of, check them out. They're from the US but £10 including delivery for 25.

I think he means heat-resistant silicone ones. Basically you want to drill a hole in your smoker and pass wires for sensors etc through it, but you want to put a rubber/silicone grommet to protect the wires through. They would need to be able to handle the heat. I did find some, but only in the US ...

Grommets for maverick probes?
Can anyone recommend anything? I want to add a couple of holes to my kettle and for when i build my UDS. I'm struggling to find silicone grommets but though i could maybe use some threaded brass nipples.
Has anyone done something like this?
