Thanks for these posts. I just received a ProQ Cold Smoke Generator for christmas so I'm really keen to try some of this stuff. You see a few dire warnings on some sites about curing/smoking meat and fish unless you really know what you're doing which has put me off a bit.

I'm a total beginner and this was my first go but i followed the baby back ribs recipe on my Weber app ( ) which said to cook/smoke them on low for about 2 hours on a weber kettle - no foil. I was really pleased with them.

How much and where was the Brinkmann one from? I've looked at a Brinkmann one but it didn't say anything about it being adjustable.
