Got 2 racks of ribs from Tesco and they don't look that meaty without opening the pack.
But the ribs that come pre-sliced look really meaty - i wonder why? different cut?
So jealous of these videos i see on youtube of the americans doing ribs, they look insanely thick! Almost 3 times the thickness ...

Emergency rub recipe needed!
Need a nice fairly sweet rub recipe in time for the weekend, can anyone share please?
Got about half a small tub left of killa bbq rub but it won't be enough for my chicken, ribs and pork butt.
Loved Toby's chicken and pork rub but not sure if he's ready to start selling it yet.

ok maybe a 1-2-1 depending on thickness. They'll be covered in rub and maple syrup, then brushed with bbq sauce in the last hour while unfoiled

What about a 1-3-1 method with 3 being in foil? All time on a smoker of course

Sorry to bring this thread back to life!
Got some ribs from a farm shop recently and were still pretty thin I think I may try find a butchers that sell the flavoured spare ribs chinese style etc, as they are more likely to have racks of those fat juicy ones untouched.
Failing that I'll have to ...

Anyhoo, where do you buy brisket from? I think morrisons sell it but is that a no no? To be honest I'd only want a small cut for 2-4 people which also reduces cooking time.
Any tips for cooking? High n fast or low n slow? Was thinking of trying ...
