Tend to foil my pork when it gets to about 150-160F and use a 3-1-1 method for my ribs, but decided to go "au natural ...

Par Cooking Ribs
I'm having friends over for food week next Sunday and have promised I'd make them the fantastic ribs I've very been boasting about. The only problem is that a previous commitment means that I won't have the 5 -6 hrs needed to cook them properly. I know that I could cook them hot and fast but I' m ...

Re: Ideal charcoal size
Thanks for the advice. I've had a good feel of the other bag I bought at the same time and that seems to have some huge logs as well. I might spend half an hour going through both bags and grading them in to size so that I have a nice mix for each basket. Just reading this back and realising how ...

Ideal charcoal size
I've just bought some restaurant grade charcoal from Bookers and the chunks are huge, the size of logs and I had to break them up to get them in my basket. This set me wondering what Is the ideal size for charcoal chunks, giving the best heat and longevity. My huge chunks did burn at a steady heat ...

When To Add The Meat?
Hi
Could any tell me how long you should wait after adding wood chips before you put your meat in the smoker. I did pulled pork for the first time this weekend and I put the meat in straight after I put the wood chips on (only used a handful of oak chips). The first ten mins of the cook were very ...

Another UDS Question!
Hi
I've just burnt out my drum ready for painting but not sure if I need to paint the inside as well as the outside. I've just bought 3 cans of black BBQ spray paint from Wilko's but I'd rather not spray the inside after going to so much effort to get the old paint off!
Any advice greatly ...

Hi Guys
Thanks for your advice. Stability and simplicity sounds right up my street so I'm going down the UDS route.
I'll keep you updated on how it goes.
