BBQ Sale at Wilkos
Hey there guys - I know the stuff is cheap and not built to last but there is a 50% sale on at Wilkos on all BBQ stuff.
I don't know if their charcoal or briquettes are any good - but the briquettes were £1.24 for a 3kg bag - so I thought it was worth a punt for a half dozen bags (it was all I ...

Re: Brisket - attempt number one!
Maybe I ended up with a poor quality bit of meat that took a bit more time to cook, I don't know.
Maybe I did overdo it though, so another go over this weekend I think. Although I haven't done ribs for a while.....

Re: Brisket - attempt number one!
I kept thinking the same when i tried it, but tried to do it through checking the temps rather than going by just time.
I might of course have to invest in a decent thermometer though and think that this probably influenced the time i used. BUT the temp did stall at roughly the temp i thought it ...

Brisket - attempt number one!
Decided that we would have brisket this week when the in laws came for Sunday lunch.
I got a 2 1/2 pound bit of brisket, didn't add too much in the way of seasoning, black pepper, salt, garlic powder, onion powder and a bit of sweet paprika. Added last night as a rub at 11.30pm as I started up the ...

Shoulder of Lamb
Got a nice sized bit of lamb at the supermarket this weekend - around £5 to have enough lamb for four (alongside ribs and chicken thighs and drumsticks)
Seasoned it with sea salt and pepper, and soaked apple chunks. Nothing else. Took about 2 hours to get to 160 degrees (my wife likes it medium ...

Re: First Smoke!
Just got to go for it markd!
As a Scotsman down here, I am a bit more used to getting the good weather, but on Friday as it hammered down hailstones, I said to myself that I was doing the first burn on Saturday no matter what and then my first cook on Sunday.
And as I fired it all up on Saturday ...

Re: First Smoke!
Only one issue,
I had a fair amount of moisture that dribbled out of one of the vents for the first couple of hours. I think it is because I got everything going, put the water pan in, then went to boil some water to put in it. Boiled water went in and let off a massive woosh of steam.
