Glad to have helped - I only bought charcoal, as i'd bought a pile of stuff when Argos had their sale.

Got a Weber chimney starter for £11.99 but was extremely lucky as i got the last one in the area. ;)

Maybe I ended up with a poor quality bit of meat that took a bit more time to cook, I don't know.

Maybe I did overdo it though, so another go over this weekend I think. Although I haven't done ribs for a while.....

I kept thinking the same when i tried it, but tried to do it through checking the temps rather than going by just time.

I might of course have to invest in a decent thermometer though and think that this probably influenced the time i used. BUT the temp did stall at roughly the temp i thought it ...

Only one issue,

I had a fair amount of moisture that dribbled out of one of the vents for the first couple of hours. I think it is because I got everything going, put the water pan in, then went to boil some water to put in it. Boiled water went in and let off a massive woosh of steam.
