I follow this recipe to a tee, produces some beautiful ribs. Personally I believe you are smoking at too low a temperature, try 250-275.

Re: Sourcing Briquettes.
Thank you all for your advice. I will have to try Weber again, and I have used Supergrills before, haven't checked to see if they're in stock at petrol stations, will definitely have a look.
Thanks

Sourcing Briquettes.
Hello there.
I'm having problems finding good, reliable briquettes to use for low and slow cooking. I used to get 5kg for £5 from Tesco during the summer (I've experimented with a few brands, and Tesco really was the best option, however sacrilegious it feels to say so), but they've not stocked it ...

Hello.
It's an offset smoker. Should be using oak logs ideally, but they're hard to come by where I live.
Thanks.

Maintaining temps with fresh coals.
Hello all.
I will be smoking a brisket tonight for several hours, and I have a question regarding how to keep the temperature constant (around 250f) whilst topping up the coals. I'm trying out a new smoker I got for Christmas and have found the temperatures to be really responsive to air flows ...

Re: Beef forerib!
They look great, cooked to perfection! Recently had forerib too, but served as slices of steak, with the rib as a pitmaster privilege!

Hey there.
Hello all. I'm Stefan from London, been barbecuing for around a year and I'm really enjoying it. Have recently gotten into low and slow smoking, will be doing some pork ribs tomorrow! I prefer to cook texas style, keeping it real simple with tons of black pepper.
Perhaps a quick question if I may ...

Re: CostCo - Belly Pork with ribs
Hello. I just wanted to know if you got around to doing it? I joined the forums to post this exact question but then I saw this thread. How did it go?
