My setup is going to be unfortunately quite complicated which is my main problem logistically. I've been bashing my head against a brick wall for about the last year trying to find storage with power for fridges & freezes. I'm gonna be looking at smaller events to start, no festivals yet. So fairs, country show type events, functions (wedding etc), pubs.... Possibly street markets too. Gazebo set up.

Wow, 6 hours, i imagine it would be slightly tough but yes a good slow cooked chilli will sort it right out:)

Morning:)

Well, an interesting evening and a slightly longer cook than expected but an amazing finish:)

After trimming what felt like a good couple of kilos of fat off the brisket and a simple salt & pepper rub it was ready.

Got from my local meat market near Brighton but they got it for me from Smithfields.

Tonight's brisket?

Hi,

Am looking for advice please... Have just got a lovely looking usda brisket out and unwrapped it. I got an odd smell from the blood that was in the wrapping.

I've now rinsed it and the smell is pretty much gone.

The date on the wrapping is Dec and it's been kept in my fridge which is at 4 ...

Does the hobbycraft stuff hold together ok then?

The sheets sound ok too.... reckon that size you might get away with just one sheet?
