Should be OK managing the fat - I'll be using a green mountain grill, so the heat is indirect, and the fat will run off the drip tray into a bucket.

I was worried about the skin too - Maybe hot and fast is the way forward.

I want to do a sirloin joint at the same time - that can cook ...

Charcoal indoors needs to be very carefully managed if you're to avoid killing all the home occupants with carbon monoxide poisoning.

Goose on the grill

I'm going to cook a goose (a whole one) for this year's christmas dinner.

Has anyone ever done one on the smoker? Looking for tips and advice as there's not much online advice that I can find.

I've put this in low and slow, but I suppose it could be cooked hotter and faster - the available stuff I ...

Don't know if you've ever considered this, but whenever I make a chilli - using a pretty similar recipe to yours, I always throw in a slab of dark chocolate as well. Give it a try!

The short ribs, by the way, were phenominal. Definitely doing them again. Come out like lollipops with fist sized lump of beef on the end. And the taste....

I wouldn't say expensive.

T & G Brisket - £8.10 per KG
Tesco Brisket - £8.00 per KG

The cost comes with the weight - Tesco will happily sell you a 600g rolled brisket, whereas T&G only sell the whole 6KG packer. i.e. 10 times as much meat.

The difference in quality is immense - I doubt the Tesco ...

Just ordered my 5th packer from T&G.

They've always been top quality so far. I've also found it difficult to find a butcher that understands what I mean when I ask for a packer cut - I know it's an american cut, and they might not be familiar with it, but most seem extremely uninterested in finding ...
