pastrami usually done with a good piece of brisket a rough guide brine seven days. dry out. pepper based rub. leave to rest 4 hours. smoke low 4 hours. place on a size grill to fit smoker. wrap in foil.like a tent so foil not in direct contact with brisket return to smoke 4 hours. take out leave too ...

would look at the proq range plus they do a] cold smoke generator] from 200 to 300 pounds for smoker 35 pounds for cold smoke generator

don't use express fuel it uses chemicals to light quicker ie contains paraffin for easy lighting, not to good for flavour or for you

hi really happy to of found your site. never joined a forum online before so bare with me if I make a few mistakes. I am into smoking both hot and cold. using a peetz smoker for both hot and cold smoking [using the proq smoke generator. so far managed brisket pork butt chicken ribs, cold smoked ...
