Welcome from NE Ireland. Getting more and more into this smoking myself but I have never smoked fish.

I'm in the same boat been tring to find a supplier of restraunt grade charcoal. I can no longer get heat beads either as the English supplier I used will no longer ship to NI, apparently due to a change in legislation in relation to the transport of combustibles
