2 pork shoulders are now standing before being pulled

the other 4 are at varying stages of readiness

lamb is coming along nicely

beef ribs - now have about 20 cooking

4 sheets of pork ribs now on

now to make some sauces

then some slaws and guests due from 2.30 onwards

i now have 6 pork shoulders on the go, 4 lamb shoulders and approx 15 pieces of beef short rib cooking

next up is putting on the last lamb shoulder and then prepping the not so spare ribs. last year i found a smallholding farm with an abbattoir, and they can send me meat direct, cutting out ...

Wedding party

Got married yesterday and having a few people round tomorrow to celebrate.

6 pork shoulders, 5 lamb shoulders, 40 chunks of beef short rib and some pork ribs have arrived.

If a brioche bun is toasted first they seem to stay together quite well. It's not for customers but for my wedding party in a month's time. The other week i used the Waitrose Heston Blumenthal brioche buns and they were fantastic but far to pricey (£150 for 2).
