Could anyone recommend any good BBQ books that they have used for both techniques and recipes please. The "Wicked Good Barbecue Book" seems to be popular.

I cooked my first brisket a couple of weeks back, and it weighed about 2Kg. I pretty much followed the cooking a 4lb hunk instructions on this link (towards the bottom right of the page)

Thanks for the reply. I was trying to use the search function early this morning on my phone, and kept getting a blank screen saying "Information" with nothing on it. Having used it on the PC today, very impressed with it. There is some really useful stuff on here.

Thanks for your comments. I'm going to glaze them so I think I will go wit the shorter times recommended. I don't normally use Tesco for meat, but there are a couple of posts on here that say they get OK results with the ribs, and getting ribs from my local Butchers has proven problematic with some ...

Pro-Q Excel Water Pan
Can anyone offer any advice or experience on using sand/clay pots in the water pan on a Pro-Q Excel please instead of water. Does it improve temperature stability, temperature range, etc.?

Just picked up a couple of cheap racks of ribs from Tesco to experiment with. Anyone used them and recommend a good starting point please for timings and temperatures.
I understand that the timings in most American books are too long for our "skinny" ribs.

I'm lucky and get mine from a local guy called Outdoor Gourmet in Devon at £15 per 15 kilo bag (same price as Co-op offer charcoal this week) great stuff.
