You could smoke some mild cheddar with apple or beech. Smoked Apple wood cheddar is absolutely delicious. Buy it all the time here in Ireland.

I've not heard of Namchar, but i belive that a lot of the blue bag resturant grade charcoal we get in the UK comes from Namibia, and a lot of people over here use it with no problems.
