Yeah your right.
Next time I'll get a live piglet, rear it, slaughter it when ready, butcher it and then cook it. :roll:

The bloke had just cut the Butt from the caracas and trimmed it so it wasn't too much for him to remove the skin and leave quarter ...

In Jamie Oliver's America book there's a good recipe for pork cracklings. Did this last time I cooked a Butt and they were amazing. Get the butcher to take the skin off for you to save hassle.
