Cooked a full packer brisket over the weekend and had a very surprising experience - wondered if anyone had any tips or observations. Am cooking on a Pro Q Frontier Elite.
I got an Australian brisket from Tom Hixson, trimmed it quite heavily (a la Aaron Franklin) bringing it down to about 5kg I ...

Re: Minor Modifications ProQ Frontier
HI,
I had the same problem, even ended up snapping off the little tab bit on the top vent - luckily it was in the open position so it just stays like that now. They are a bit flimsy to be honest, in contrast to the rest of the unit which is great. I used a little wd40 on the bottom vents and make ...

Re: Advise on decent thermometer
I've got two Habor ones - a foldable one, just like the thermapen - and the one with a probe on a wire with a timer etc, like the maverick. Obviously not as high quality but they're both bang on temperature wise, and have served me very well so far. A good option if you're looking to save a bit of ...

Re: Hellooo from Down South
Hello, and that sounds great!
I have the same smoker, had it about six months now and looking forward to a summer of bbq. It's a great piece of kit - my only piece of advice (other than giving yourself all day to cook) is to get some Aussie heat beads rather then the usual bar-be-quick or similar ...

Re: The perfect all round BBQ craft Beer
Not normally a lager drinker but a Swedish beer called Pistonhead Kustom Lager is delicious with bbq. It's in the big supermarkets, worth a try. Otherwise Old Hooky is perfect (and happens to be my local brew).

Re: Hello from Swindon..
Hi, and welcome! I'm a big fan of smoking all year round - good way to get some practice cooks in before the summer bbq season.
I've got the same pro q as you and have found that on long cooks (18 hour pulled pork springs to mind), I had to refuel twice, and clear away the ash from some bog ...

Re: Getting started with smoking
Afraid not - I think Black Friday's more for the high street! But many of the big bbq/smoker suppliers (google WSM or ProQ and you'll see the main ones) do tend to have sales on over the winter period, so it's worth keeping an eye out over the next few months. Good luck with it all!

Re: Getting started with smoking
I think I'd concur with what Tiny says - especially about cheap charcoal and self lighting rubbish, I had a terrible time with some cheap briquettes producing more ash than Vesuvius during a long cook. Worth remembering that the Pro Q (and probably the WSM I imagine), being modular, works just fine ...

Re: Getting started with smoking
Hello and welcome! You'll find the forums to be an excellent way to learn about smoking, some great people on here. In their absence, I'll do my best to help though. I bought my first smoker a few months ago, having spent months researching it and mulling over the options, so hopefully my experience ...

Re: A visit to Smithfields
Excellent! Thanks for the tips. Those prices sound amazing.
GingerBen, you've convinced me - a 3am trip it is. Had been reluctant to drive to London (which I've never done) but as you say, the roads are dead and there's no charge. Great tip on the NCP too, cheers. Still a few weeks off. and may ...
