I was told by others (not on here) and in a book that you need to cure all meat you smoke due to the low cooking temp you run a risk of the meat gong off from growing bacteria.
As for killing my last hot smoker bit of a school boy error. Bought it from US Amazon got it delivered changed the plug ...

Cold Smoking fish/meat?
I was just wandering I know you need to cure meats for hot smoking due to the low temp but do you need to cure fish/meat for cold smoking if you later plan to cook it?
Reason being I fancy cold smoking my frying steak before I dry it out in dehydrator to make jerky.

Easy 1st Hot Smoking Recipe?
I may be buying a Electric hot smoker and wandered if someone had a fool proof 1st recipe I could try out since paranoid I'll give myself food poisoning or something. I tried cold smoking cheese with my Pro Q Cold smoke generator in the past but don't have any experience with cures since never tried ...

Looks like I may have to send it back to the US after all since the only quote I got for a custom element was £140 without the power lead plug and VAT. The whole smoker only cost £132 delivered. There must be an easy way to smoke food without having to constantly nurse the temperature and coals?

Well wasnt sure so only half filled the ProQ and its givin the chedar a nice faint wood smoke flavour but found the Cold smoke machine a PIA to get started. Next time i'll give it a full load of dust.

There isn’t a British distributor I bought it via Amazon.com. Sadly no one is advertising a UK 230V version which is why I have contacted hearting element companies to see about getting a custom one made.

There's a great Butcher in Henley On Thames, that's probably a good 40 miles from you, but if you're ever down that way...
There's also a decent one in Tilehurst just west of Reading, and one in Shiplake. Sorry these aren't closer to you but these are the ones that i use.
