ribs have been in foil for an hour now and starting to shrink back, i've basted them in cider again and put them back in the UDS for another hour. kielbasa also got foiled an hour ago, it is a lovely golden colour now and firm so it's double wrapped and put in a cool bag. belly pork needs at least ...

d-day...first smoke for friends
the wife and i decided to get one last bbq in before the autumn, so we've got about 15-20 round this afternoon/evening.
yesterday i dry rubbed three racks of ribs and a belly pork joint.

whatever paint is there will get burned off after your first run, and then it'll be susceptible to oxidization and rust. best bet is to remove the outer paint with a fire and then a flap disk, and then give it a coat of hight temp or bbq paint.

after taking the shoulder off the temp raised to 340F but when i tipped the bag of smoked beech on the coals and brought the temp back down to 230F and it stayed there for the duration of the belly pork - 4 hours.

still struggling to keep the temp down with the lower vent fully closed. when it started creeping above 250 i soaked the other half of the hickory chips for 30min and covered the coals with them. it dropped back down and stayed there for the next 2 hours.

he guys. so i've done one dry run with no meat to season the UDS and then another smoke to try out the minion method where i popped a small piece of neck fillet it. turned out nice, but was running a bit hot so i've now i sealed up the edges of the vents with silicon.

ASDA's often have roasting tins a £1 each if that's cheap enough

the showers held off for long enough for me to mask up and give it a couple of coats of bbq paint. i just need to find a cheap baking tray to use for the ash catch tray and then season the inside with veg oil before doing a dry run to get the temp set ok.

had a result with the firebasket. got hold of a chromed shopping basket, cut and shut it to be square. welded the handle on and jobs a good 'un. made a frame with castors for the drum to sit in and also cut a few M8 nuts in half and welded them in to support the rails for hanging sausages from. they ...
