hi all, a week late - but thought I would share my brisket photos. Very simple rub of salt and freshly cracked black pepper. Baby WSM at around 250-260F and let the meat reach an internal of 201F
Soft, tender and juicy as hell. Overall it was delightful.

if you have a costco nearby they do great pack (4 large sets of baby backs) which are vacuum sealed.
Always produce amazing smoked ribs - they even work in a weber kettle.

hello all,
Think this is my first post - i've been lurking for a while!
got my WSM (baby one!) ready to go and 4kg of brisket in the fridge.
My maverick is working and the hickory is ready.
Excited for an early start tomorrow...will post some pictures!

I went there last week with some friends.
Ribs were great, juicy, smokey and suitably fatty as were the pulled pork sliders. Just not enough pulled pork in the sliders for my liking. Home made beans were incredible.

I'm drooling.
So weber one touch premium purchased and arriving this coming tuesday. Which is a work at home day for me - so will be sure to get some ribs on the go.

Thanks for sharing all your experience, advice and expertise. Have decided on buying a weber kettle and see how I get on with this regarding smoking and low and slow grilling.
