We have thick sweet KC style sauce and a thin spicy red vinegar sauce...for our glaze we just equally mix the two together. So it gives it the sweet with a little heat. We just lightly coat to give it a shine and extra color.

Our Award Winning Pulled Pork

This is how we do it.....

Rub- Base is equal parts salt, brown sugar, cane sugar & Paprika. A little vague here but some garlic salt, black pepper, cheyenne pepper, oregano, onion powder, chili powder.

Injection - Mostly apple juice...with lemon juice, orange juice, apple cider vinegar

That country Kookers smoker looks like a thinner version of my superior ss1. Am I correct in thinking that?

Yes you are correct. My understanding is the Superior and Kountry builders both worked with Stumps Smokers originally. They broke away and created their own smokers with subtle differences ...

It's takes about an hour to get them going good. So it's not too bad...just a little planning needed.

Our setup

This is our setup...we have two gravity fed smokers. They are almost identical but the larger smoker was built by DW Kountry Cookers and the other by Stumps Smokers. These things are heavy....The Kountry weighs 440 pounds while the Stump is 375 pounds...or about the size of a couple of my relatives ...

Hi Scott! Unfortunately I've got family obligations during those events so I won't be able to attend either one. Our next competition will be Pig & Peaches in Kennesaw, Ga. 8/24.
