Just to be different ... I agree with you Al

I am a purist, I never use liquid smoke ... and find that a lot of people who do, use too much so the flavour is horrible ... my earlier comment was that if I could taste liquid smoke then I down marked ... maybe the trick is, don't let me taste it !!

I have to assign Al's description of liquid smoke to long term memory, it's a classic

So Al, a night on Guinness and cider with some hickory smoked peanuts on the side followed the morning after with smoked bacon and egg sandwiches with brown sauce and a cup or two of strong coffee. I reckon that might work.

I hate the stuff and would never use it. I say learn to smoke the big meats properly and you will never need it.

Go ahead I'm waiting. lol

Damn, Al, I wish you would cut loose and let us know what you really think! :D

I do agree....liquid smoke sucks. My wife gave made some "smoked salmon dip" one time made of canned salmon and liquid smoke. That night, I happened to come down with a bad case of the trots and every time now that I think of that taste I want to pray at the porcelain goddess again.

Thanks for your eloquent description, though.

I should have taken your responses to ballut as a bad sign rather than google'ing it myself - sooo grim!!
