As I said earlier in this thread, I'm a make it yourself guy, but until I crack an amazing sauce that will be a winner, I'm going to use proven commercial sauces for competing. However I don't use them straight out of the bottle, I blend and cut them.

Soory to sound ignorant but what cut is "pork butt" in England?

closest thing I get to a butt is a neck end.

you can also try asking for pork collar though it will probably be 4-5 lb only

My butcher refers to it as a full shoulder with the Hock End cut off. They come squared with the Blade bone in.

Andy Annat is a Butcher by trade so he will probably elaborate.
