Jonty, now that sounds really good.
Ok, have just finished "Eggs part 2", smoked for an hour and then cracked the shells with the back of a spoon (lost my hammer!) and then given another hour, this goes down as a fail I'm afraid, having cracked the shell it kind of collapsed inwards during the second hour and was then a devil to get the shell off the egg, it has just taken about five minutes to pick the fragments off the egg (thats one egg - got another five to do!!!) There was no gain in the taste test that I could pick up on, I don't think it took on any more smoke, if anything the texture was somewhat rubbery. To sum up - not doing that again!!! Will go back to the instructions at the start of the thread.
I think the cold smoking method to start with has a lot going for it and will have to try it in the future.
Anyone know where I can get an Ostrich egg from for Thanksgiving?
