So, anyone smoking Lamb out there?

I'm really looking to low n slow cook some lovely lamb, fall off the bone and dry enough to shred!!

Anyone done this? Have any tips? How come there is hardly any posts with regard to lamb cooking/smoking?

I've tried butterfly leg of lamb http://www.hotsmokebbq.com/063_lamb/butterflied_leg_of_lamb.php which turned out really well and doesn't take too long. As to cooking it long enough to shred, never tried it but I have seen a recipe Owensboro-style BBQ Lamb Shoulder https://www.fiery-foods.com/recipesearch/owensborostyle-bbq-lamb-shoulder or Kentucky Style BBQ Lamb http://www.dizzypigbbq.com/recipesKentuckyLamb.html I've never tried these but they seem to be what you are after
