Rib cuts

Postby essexsmoker » 08 Aug 2015, 20:44

Hi all, I was under impression that pork spare ribs came from the belly section , however, I've seen diagrams of spares cut from above the shoulder area. Has anyone ever had these? How are they different? The shoulder ones were labelled as spares and the belly ones as bbq spares.

If you imagine it on a human the spare ribs run from the front centre of the body ie the chest or belly to the side of your body. Then the loin back (baby back) run from here up to the spine. My butcher advertises their pork shoulder joints as spare rib joints.

That's the bit that is confusing, why would a shoulder joint be anything to do with spare ribs? Which are a merry mile away.

Part of the shoulder is in the spare rib section though. The shoulder runs from the front of your body to the back. Someone correct need in wrong?
