Thanks essexsmoker. It all seems to work really well. If you want the drawings let me know....
The stainless doesn't seem to move noticeably when it's hot either which was a worry, the doors still open fine.
I am going to add some Vermiculite insulation boards to the inside at a the top and around the firebox to try and keep some more heat in.

I did a brisket on Sunday and the weather was pretty cold up here, it was -2*C when I started and barely got above freezing all day. It took a little longer to get the cabinet up to 225, owing to the weather I guess.
Brisket went in at 9.40am, it stalled at 160F for 2 hours and dropped to 158F. It was out of the stall at about 2.30pm and I double wrapped it at 165F. It finally reached 195F by 5.30pm.

I have found a great local butcher who has taken interest in what I am doing. He sourced me some unrolled and untrimmed brisket which was great.
This was smoked with cherry wood because that is all I had available at the time. I have a stack of oak logs but they are still seasoning.

The smoker consumed 3 full chimneys of lumpwood over the 9 hours of burning. Next I was to try and set up a path of unlit coals in the firebox and see if it can go the distance without any being added.

Sounds like a great cook. I love cherry. Great wood to smoke with.
