Hi all.
Just wanted to know if there was anywhere where you can get a guaranteed USDA Prime grade Brisket in the UK. I know Hixson sell USDA but I'm not sure if it is choice or not. Any help is much appreciated.

Why don't you drop them an email and ask?

Yes, it is choice.
At £63, imagine how much the prime would be, not to mention wagyu.

Wagu is a different grading system so you can't add it to the same scale. USDA choice is better than standard, the supply has been all over the place recently but hixons have just got some back in which cooks up well ( different brand to normal) there isn't a decent enough supply of prime at the moment. Hixons may get 2 cases every few weeks if they are lucky.

You're quite right Toby, that did look like I meant USDA wagyu.

Have you ever had prime from them? How much was it?

If you live near London, Manchester or Glasgow, try a kosher butcher.

I'd rather not. I prefer my meat to have been slaughtered humanely.

Well, I didn't come here for an argument, but since you mentioned it I'm happy to oblige.

I think you will find that Kosher slaughtering, on the whole, is far more humane than standard slaughtering. There is plenty of evidence suggesting that the shechita, whereby the knife is drawn in (by Halachic law) one smooth, continuous and fast motion across the jugular, carotid, esophagus, trachea and vagus causes an almost immediate blood loss and unconsciousness that will allow the animal to bleed out as much as possible. The kosher process, as a whole, dictates the animal must be treated in a humane manner from birth. All else renders the meat unkosher.

To me (and, while I'm not strictly kosher for financial reasons and my love of pork) that method sounds far more humane than transporting an animal by the hundreds stuffed in the back of a lorry, then being shackled, stunned, bolted, and if all that fails or is done incorrectly, simply bashed in the head.

But like I said, I didn't come here for a fight, I just wanted to make a suggestion where to find good brisket.
