Recommended bird rub/brine/marinade .....

Postby Optim » 24 Jul 2016, 09:31

First things first hello folks , my name is Lee and I'm from just outside belfast in northern Ireland, I've been grilling for some years now but have recently been introduced to smoking which I'm keen to get into.

So yesterday I purchased a weber smokey mountain (47) and I'm dying to get my hands dirty! .

First cook will be a full chicken so if any of you kind people have any tips or ideas for a good rub or brine or marinade I'd be very thankful.

Many thanks
Lee .

Wotcha Lee :)
Personally, for a first time, I'd just go with a salt brine for the chicken, so you can figure out how it tastes different (and better!) than an over roasted bird.
Then you can start mucking about with rubs and whatnot.

Failing that, if you are really impatient to get going, I'd still brine it for a couple of hours, skip the rub and make a really nice mop with whatever you think will taste nice. Brown sugar, soy sauce, mustard, chilli, honey, citrus, thyme, rosemary (any fresh herbs really) are a few tried and trusted suggestions, although maybe not all at once!
