Hi All

I am very new to the wonderful world of home smoking

I have bought a couple of books and trawled the internet for ideas

Due to my small business I can get fresh meat at very reasonable prices, so have decided on chicken breasts for my first smoke

I am after some advice reference how long in the brine

What temperature in the smoker and how long to smoke for

Any advice would be greatly appreciated

Regards

Andy

Hi Andy,

I've not tried this recipe but it's from Pitmaster and looks good.

Brine the breast for 24 hours. Rinse in cold water. Pat it dry with a paper towel.

Cook time 2 hours. 300f.
Baste with a butter mix every 20 minutes. The recipe says to cook them in an ovenproof dish in your smoker.

Hope this helps, enjoy.
