Just thought I'd share my dinner with you:

1/2 hour at 600f and served just on the blue side of rare - lovely!

Did manage to kill both probes for my ET-733 though :-( anyone know what the max temp is supposed to be for them? Both burst into flames!

That looks fantastic!

I haven't grilled with my kamado yet. Any tips? I would be worried about nuking it.

Looks good mate! The et- 732 max temp is 572oF so am sure 733 would be about the same. Have you heard of dirty steaks? Sear them straight on coals... really nice

I plan to try the dirty steak next! Lewis - as long as you buy a decently thick steak (this was pushing 2") you can't go far wrong as long as you monitor internal temp. Hit it as hot as you can, as close to the coals (or on them as TTB suggests) as possible and take it off around 120f IT for rare. Lovely!

600F isn't nuclear, you can easily get to 1000F without worry for steak cooking length times, the gasket on the Joe is meant to be good for 1200F. I would keep the first 3 or 4 cooks below 500F if you can and then work up to higher temps from there just to let the gasket set in.

Light the coals and enjoy the ceramic experience
