This is well worth a read for would-be competition cooks, particularly if you cook on WSM's or Pro Q's.

For those who don't know who Harry is, he's one of the cooks on BBQ Pit Masters and he mixes it with the big boys using only a couple of 18.5" WSM's and a stoker. He won California Rookie Team of The Year last year and has amassed prize money of over $20K in his short competition career.

He's also a really nice guy.
