Brisket was among the things I was really surprised not to see - or at least not much of - one stall was doing it, covered in a ridiculously sweet sauce that masked the flavour of the beef.

All the ribs sold out very quickly, and not one stall had vinegar sauce for the pulled pork!

These commercial bbq outlets need showing a thing or two....
