of BBQ are you all cooking over there as far as competition turn in? Also, I'm curious what is your judging scheme like?

The rules are based on KCBS rules.

The competition food tends to be KC style too, sweet and sticky.

There are at least two of us who are really into Texas style though. Personally, although I've not yet had the opportunity to eat it in Texas, I love Texas style brisket so if you have any good rub and mop recipes please share them :D
