Anyone to a dirty rice recipe?

Or any savoury rice recipe that can be cooked on the BBQ or in the kitchen.

Preferably a uk centric recipe that does not begin with 'open a packet of' :-)

I think most of them have a line somewhere that has open a packet of............................................rice :D ;)

Not tried it myself but this was the first hit on google, uses long grain rice no mention of a packet.

Did a dirty rice the other night but it was off the hoof and will have to try to remember what I did!!!! Will get back to you on it.

Here is a savory rice that I do from time to time -

One and a half teasoons of lemon Pepper seasioning.
Half teaspoon of Garlic Powder
Two teaspoons of Italian Herbs (mixed herbs)
One Chicken Bullion cube (Oxo to those in the UK)

Two cups of water and one cup of rice

Put everything in a pan and cook using the absorption method

Some variations I sometimes do -

Chop up a medium onion and soften in butter before adding the other Ingredients.
Add a tin of red beans with the other ingredients.
Add some slivered Almonds for a different texture - about 2 teaspooons
A little Turmeric will enhance the yellow colour.

Yeah, was looking for anything savoury as a BBQ side - maybe something like nandos spicy rice.

Do you cook at a high heat throughout or do you bring to the boil and then simmer? Pot covered? I'm wondering if this can be done on a smoker wih an open pot to absorb some smoke.

I assume you Use long grain easy cook rice too? Typically I use a 1:1.5 of rice to water ratio for this cooking at a boil (ora rice cooker).

It sounds silly, but oohing ood rice is an art!

I see no reason why you couldn't cook it in a smoker, my only concern would be timing and the number of times you'd have to lift the lid to check the rice wasn't drying out.*** If you can cook, chilli, bbq beans, gumbo etc on a smoker rice should be okay in my opinion at least.


***Maybe cook one in an oven at the same temp as the smoker to give you an idea of how long it should take reducing lid-lifting

Good idea. I've seen some recipes on the net for cooking rice in a slow cooker - i'm going to use that as a starting point.

As you say - being uncovered, it may well cook up differently than if covered. Perhaps it may need a combination of covered then uncovered. First to cook the rice, then to brown it and give it some smoke flavour. M aybe a bit of a tin-foil cover is needed with a slit in it to allow some smoke in.

I agree good rice is an art form, for me it has to be basmati every time, and having tried various methods I ma mildly ashamed to say I have aplastic rice cooker into which you add rice cover with boiling water and then microwave for 10 mins and you have perfect rice every time. It is not cool or revolutionary but it just works.......


feel slightly ashamed but with decent rice :)
