Brioche Burger Bun recipe?

Brioche Burger Bun recipe?

Hey guys,
For my birthday I was taken to an american style diner in Covent Garden called Diner. The food was pretty good, but I fell in love with the broiche buns they used for the burgers. Firstly has anyone got a tried and tested recipe, and secondly what do people used to shape the buns whilee cooking? Due to brioche being quite a wet dough, You really need to try and use a ring, or a bun pan like this one..

I was thinking that small spring form tins might work well, but at £4 each, £24 for 6 is pretty expensive.

Any ideas? They have to be quite tall too..

I feel that burger buns need or should be uniform in size and shape. I've tried looking elsewere and cannot find anything that can be used. I think you get what you pay for.

What about large metal cookie cutters or chef's rings?

Hey guys.
I have been looking at cooking rings, but so far not been able to find a big enough one. Also cookie cutters are to short. I am after something that is tall to keep the vertical shape too - no muffin tops :-)

The world seems to have gone mad this morning, on another thread backyard smoker is advocating strong chedar and now you proffer brioche?

I suggest to you Sir, that a good tastless sesame seed roll is what you are looking for, I believe they can be purchased from most major supermarkets....Brioche indeed.

If you get some stiff baking parchment and line the cutters as you would line the tin for a good fruit cake it should work. Worth a try, and I'me with Tiny the burger is the key not the bun :D (cheesy grin)

Well we knocked these rolls up on Monday on the gas BBQ :oops: . Really good.
if anyone wants the recipe I can post it at the weekend when I get home.
