My Favourite American Coleslaw

250ml Vegetable oil
200g Sugar
250ml Cider Vinegar
2 tsp American Mustard
50g Sweet pickle relish
2 tsp Celery seeds
1 Large head green cabbage – chopped or shredded
2 Bell Peppers – chopped
1 Large sweet onion - chopped
Salt and Fresh ground black pepper to taste

In a small saucepan combine the oil, sugar, vinegar and mustard. Bring to boil and boil for about 5 minutes. Stir in the pickle relish and celery seed. Remove from heat and allow to cool.

In a large bowl, mix together the cabbage, pepper, onion, salt and pepper..

Pour the cooled dressing over the cabbage mixture. Mix well. Chill.

Cover and refrigerate for at least one hour (tastes better if made the day before to allow flavours to mellow). Mix again before serving.

Yield : approx 20 servings

Not sure who else has tried this, but I just made it tonight to go with my BBQ food and wow!

This coleslaw is amazing, will recommend this to anyone even if the pickle relish is hard to get it's well worth it.

Where would I get my hands on Sweet Pickle Relish, or is there an easier to get substitute?

I couldn't get the sweet pickle so tried it with some branston gherkin relish instead. I'm letting the liquid cool at the moment, my only concern is there seems to be loads of oil in it, is 250ml right?

Just had a taste and to be honest its too sweet for me, I'm not really sure what to add to try and calm the sweetness, any idea's?
I think in future I'll put 50g less sugar in.

I've not tried the gherkin relish as the sainsburys near me didn't stock it, but I would think that it's very similar to the stuff I brought back from the US.

The end result was really nice, I added more vinigar and some celery salt in an attempt to cut through the sweetness. It even got a thumbs up from my wife. :D

I took a batch of this to a party that i was at yesterday and everyone was asking for the recipe as it's very different to the normal mayonnaise based coleslaw that we get over here.

Anyone who hasn't tried this should give it a whirl.
Never tried a slaw before that wasn't the normal creamy stuff we tend to get here (sheltered life  )
But this was an unexpected lift to a recent BBQ.
