Cornbread Muffins

Got a recipe for a killer 'Slaw or some hearty BBQ beans? Maybe you make some killer ABT's or something more inventive. This is the place to post your recipes.

Cornbread Muffins

Followed this recipe and used an iPhone app to convert US to UK measurements.

They went in the oven for about 20 minutes.

Amish Corn Bread Recipe

1 cup yellow cornmeal
1 cup flour
4 tbsp sugar
1 tsp salt
4 tsp baking powder
1 egg beaten
1 cup milk
2 tbsp shortening, melted (butter works just as good. unsalted if you add the salt separately).

preheat oven at 200 C

Mix the dry ingredients together in a large mixing bowl and create a well in the middle. Chuck in the egg, milk and melted lard/margarine and mix well. I just used a good ol' spoon.

Grease your cake/muffin tray and spoon mixture in. I left about 1/2cm gap in each muffin holder to allow for them to rise a little.

I could not find any supermarkets that sold cornmeal but my local indian spice and food shop had it in stock! It comes in fine and coarse bags - I used fine.
EDIT> My local Tesco Extra has started to stock bags of Cornmeal in the west indian section.

Photo attached of results - and they taste nice too! Gonna serve this up with some pulled pork tonight.

I was on the understanding that Cornmeal, as it is refered to in the States, was polenta, as refered to here.

Is this the case? If it is I am sure the local Asda/tesco would stock it.

If you want the real thing and you are in the UK I could post you some at cost.

Oh and I suppose you could use margarine instead of the lard.

you could also use bacon drippings which make your cornbread delicious....

Cheers. If I get stuck I will take you up on that offer.

It will probably be 2 or 3 years before I find the time to have a go in the first place :D

Just an update to this as I doubled up the recipe for 20 odd people at a wedding event I was invited too. We had chilli and cornbread the day after!

I used melted butter and golden caster sugar in the mixture. WOW, they were good.

One of the guest's nan is from Texas and said that she would be impressed with them; so good result me thinks! :lol:

I shall have to look up the recipe for those, thanks Dr Sweet Smoke.

I also have to thank you as it was your website that informed me of the Grillstock event in Bristol. Myself and a few friends are going to head down there on Saturday so I will keep an eye out for you (and hopefully digest some fantastic BBQ)!
