If anyone has any well known brand name rubs (Especially hard to find ones from the US), any chance you could list the ingredients here as I'm making a bunch of rubs and would love to see what they got in them for inspiration.

Here's a couple I have;

Bad Byrons Butt Rub BBQ Seasoning
salt
black pepper
granulated onion
granulated garlic
paprika
chipotle powder


Bad Byrons Jubilee Seafood Seasoning
celery salt
paprika
lemon powder
worcestershire powder
turbinado sugar
black pepper
garlic powder
onion powder

hope this helps ya.


Montreal
8 tbsps sea salt
2 tbsps fresh ground black pepper
2 tbsps onion granules
3 tsps garlic granules or dehydrated garlic
3 tsps chili flakes
3tsps dried thyme
3 tsps dried rosemary
3tsps fennel seed

Old Bay
4 tbsps ground bay leaves
3 tbsps celery salt
2 tbsps dry mustard
4 tsps ground black pepper
2 tsps ground white pepper
2 tsps nutmeg
2 tsps cloves
1tsp allspice
2 tsps ground ginger [ powder]
4 tsps paprika
1 tsp chili flakes
1 tsp mace
1 tsp ground cardamom

Lawry's
8 tsps sea salt
8 tsps sugar
2 tsps paprika
1 tsp turmeric
1 tsp onion powder
1tsp garlic powder
1 tsp corn flour [optional]


i'm also playing with rubs, cant seem to get one right though, yet.

I've got an old bottle at home which I can look at tonight, but most rubs just put spices when it comes to the interesting part.

Of course there are loads of rubs that just give ingredients not quantities or % and it's the blending that counts.

Only after the ingredients Keith to see what they are using.

Normally the ingredient with the highest % is listed first and so on, which gives a clue as to how they're blended, but doesn't always work that way.

Some of them I've noticed even give the % used in the ingredients list, which is very handy ;)

Ok so they put a lot more information on the bottle than others do.

Brown Sugar, Sugar, Salt, paprika, and then in says spices including chilli pepper, evaporated cane juice, dehydrated garlic and orange peel, onion powder, MSG, mustard flour, dill weed, turmeric & natural flavour

I don't remember seeing any black pepper in the rub, but its been quite a while since I used it.

you'll find that some competition teams do and some don't or some do half and half. I think the main thing teams need to worry about is cooking the meat correctly and presenting it nice.

we noticed at the American Royal that our ribs weren't tender enough in the invitational which also had a knock on affect to our taste scores as we cooked exactly the same taste for the open just more tender and scored better on taste.

we had a similar thing with our chicken, where it didn't look great taste and tenderness scores suffered, we tighten it up in the open and scored much higher.

Not really black pepper burns I only ever use it at the end of all the cooking I do.
