a simple sauce

This wont win you any prizes as the judges can mistake the jerk seasoning for Asian flavours but outside of competitions this will win you plenty of friends.

2 tbsp chilli powder
1 tbsp black pepper
1 tbsp Colemans dry mustard
1 tbsp Jamaican jerk seasoning
1 lge onion
8 cloves garlic
1/2 cup dark brown sugar
1 cup white wine vinegar
1/2 cup runny honey
1/4 cup mixed dark soya sauce and Worcester sauce
1 ltr Heinz/Jardines ketchup
1/2 pint juices from BBQ meat optional]

Sweat off onions and garlic, add dry spices and cook for 1 minute. Add ketchup and wet goods, bring to boil then simmer for 15 minutes more. Keeps well refrigerated unless you use the meat juices.
