Big Bob Gibsons white bbq sauce

Got this one off triple D and Bob's son gave out the quantities, he makes it 1 gallon at a time but you could easily scale down. The recipe is on the internet but it's not quite the same as this one.

1/2 gallon of mayo
3 tbl of horse radish
3 tbl of ground black pepper
3 tbl of lemon juice
1/4 gallon of vinegar
2tbl of red pepper powder
1pt of apple juice
2 tbl of salt

The recipe is also in PLAB but as I've packed all my books away in preparation for moving next week I can't check whether the recipe is the same.

I fecking love this sauce, just remember the horseradish is meant to be prepared horseradish rather than horseradish sauce but you can get away with using creamed horseradish if you get a strong one and but a little bit more in.

It's basically horseradish root grated an then put in vinegar, almost like it's pickled. I've never seen it over here, brought some back from the States in 2009 specifically for this recipe, then did the same again in 2010 :)

When I move I'm going to start growing horseradish myself because I adore the stuff and find that most horseradish sauces I buy over here aren't strong enough. You could use wasabi paste in this recipe as it's stronger but I guess it will give your sauce a bit of a putrid tint :o
