I much prefer cowboy chilli ie without beans.

When I do my chilli it's meat, onions seasoning/sauce. All the extras, beans, chees, grated chocolate etc go in bowls on the table. I picked that tip up at the old Chicago Meat Packers Restaurant decades ago. It's not traditional but it was the way they did it and made for a good sharing experience.
