Can you get Tri Tip there?
It is a Central California thing
I am in South East Calif, 100 miles from Arizona
Tri Tip is popular but nothing like Central Calif
Here we cater Ribs, Pulled Pork and Chicken for the most part

I believe a tri tip is the triangular muscle from the top of a rump and I have cooked one indirect at 275F...tasted fantastic but would love to learn more about this cut ...
