Took delivery of my first smoker, a 57cm WSM last week and did my first cook over the weekend..
It went pretty well, but my cooker is running VERY hot - 280F+ with all the bottom vents shut. I think it's due to a badly fitting door, so I'm going to give it a bend before I cook next this weekend.
I'm very lucky in that I live quite near Turner & George, so I've been buying my meat from there. I did pork & beef ribs on my first cook. The pork ribs were a little over (the bone pulled right off by lifting up a rib!) as was the beef, which was a bit dry in places. I also did some sausages (Angel hot guts and pepper pigs) which turned out really well.
Looking forward to more cooks to get my WSM well seasoned!
